Stolen Recipe!
BisonChili
-2 lb. buffalo
-1 large sweet potato
-3-4 cloves of Garlic
-1 large zucchini (added for color )
-2 medium heat green chilies, roasted on the grill, peeled, diced then frozen
-3 tomatoes that were roasted in coals then diced and frozen
(**I've also made this with canned Fire Roasted Tomatoes with Green Chilies)
-1 tetra pack of Chili Beans
-Quinoa (cooked)
-Olive oil
-Herby
-Salt
-Cayenne

Sauté garlic, sweet potatoes and zucchini in olive oil and salt. Then add Bison and flavor it liberally with Herby. Once meat is browned, add tomatoes, beans, chilies and cover with water.
Cook on med for about 30 minutes. Sprinkle cayenne and salt to taste. (I am an Herby addict so I always add more at the end of cooking.)
We eat this served over the cooked quinoa with avocado on top and Beanitos on the side. My kids also sprinkle grass fed goat cheese on top!
This is 3 dinners for a family of four.
I'm terrible with recipes and generally don't follow one. I just add things here and there as I cook. So I hope this is understandable!

Coconut Flour Pumpkin Bread 
-3 eggs
-1½ cup pure pumpkin puree
-2 tsp pure vanilla extract
-⅓ cup pure maple syrup
-2 tbsp coconut oil, melted
-½ cup coconut flour
-1 tbsp ground cinnamon
-A pinch each of ginger, pink Himalayan salt, and freshly ground nutmeg
-⅛ tsp allspice
-1½ tsp baking powder
-1 tsp baking soda
-A handful of pecan halves, roughly crushed (optional)
-½ tbsp cacao nibs (optional)
-Preheat oven to 350⁰F and line an 8"×4" loaf pan with parchment paper, leaving an overhang on the sides.
-With a hand-held electric mixer, whip the eggs until pale yellow and triple in volume, about 5 minutes.
-In a separate bowl, whisk together the pumpkin, vanilla, maple syrup, and coconut oil.
-Add to the eggs and mix on low speed until homogenous.
-In another small bowl, whisk together the coconut flour, spices, salt, baking powder and baking soda.
-Fold into the wet mixture until fully incorporated.
-Spread batter evenly into prepared loaf pan and smooth the top.
-Top with crushed pecans and cacao nibs if desired.
-Bake for 45 minutes until a toothpick inserted into the center of the loaf should come out mostly clean with a few moist crumbs when done.
**Cool completely before slicing.
